Region & altitude

100% Arabica beans from Pasajquim (Atitlan region), San Juan la Laguna Sololá, 1750-2010m.

Intensity

2 (medium). You taste sweet citrus notes, hints of white chocolate, red fruits, caramel, passion fruit & ripe plums.

What's special
about this coffee

This coffee is the wonderful result of a collaboration between coffee farmer Don Fredy Guarchaj and coffee expert Wilfrido Lopez (Bless Joy Coffee). Fredy took care of the natural production of the red berries, manual weed removal, selective harvesting of the coffee berries and transportation to Quetzaltenango where Wilfrido took over. He went to work pre-cleaning and flotate, disinfection and again manual selection of the ripe beans. After controlled anaerobic fermentation in vats, they were berry dried in the sun. Sarah met Wilfrido twice before in Guatemala and this humble man speaks poetry when he talks about coffee.

Producers & cooperative

The producers are Fredy (cultivation) and Wilfrido (processing). The coop Maya Ixil only handles exports in this case.
