Cascara -Spanish for 'peel-' the shell of the coffee berry that remains after depulping coffee beans.

After it has been slowly dried in the sun, you can use it in various drink preparations, from hot tea to fresh cocktails. A unique, sweet, fruity taste.

This Cascara comes from Colombia, from the coffee producer Juan Pablo, where our roasters Sarah and Lieze were still visiting.

Our ultimate goal: equal and direct relationships with cooperatives and/or farmers . We want to give them ownership in the coffee chain and grow together towards climate-proof plantations.

If this is not (yet) possible, we choose FTO. Through these labels we can be sure that farmers receive support to provide for their livelihood and to invest in their coffee cultivation.

How to make cascara
to use

Pimp your coffee or cappuccino with a homemade syrup:

Ingredients

  • 400ml water
  • 45g Cascara
  • 2 tsp sweetener

Bring 400ml water to the boil. Get from the heat and add 45g Cascara. Stir and let it steep for 5 minutes. Sieve and add 2 tsp sweetener to it hot water. Stir until dissolved and is syrupy.

Bottle and cool!

In Ethiopië en Jemen wordt cascara al eeuwenlang gedronken als infusie, vaak met gember en specerijen. Pas in 2022 mag het officieel in Europa verkocht worden als novel food.

Met zijn unieke balans tussen een vleugje bitter en een zoete ondertoon is cascara een echte smaaksensatie. Cascara is geen thee en geen koffieboon, maar iets daartussenin. Omdat het vruchtvlees natuurlijke suikers bevat, kan die vers snel gaan fermenteren of schimmelen. Elke schil wordt met de hand nagekeken en alleen de allerbeste stukjes komen in jouw kopje terecht. Een intensief karwei, maar het resultaat is het meer dan waard!
