Sisters' Surprise. These are special discoveries by Sarah & Lieze, the roasters behind Ray & Jules. Here’s what Sarah has to say about the new Sisters' Surprise coffee from Honduras:
This coffee from Honduras is still a little secret for now. Sarah and Lieze have been tasting it, fine-tuning it, and tasting it again for weeks. A final name? We don’t have one yet. And we’re keeping exactly where it will show up later to ourselves for just a little while longer.
What we will reveal, though: in your cup, it’s round and smooth, with flavors of almond, nougat, and dark chocolate. A hint of cranberry adds a touch of fresh zest, after which that long, chocolatey finish lingers. And now it’s your turn. What do you taste? What do you love? And where do you think it could use a little tweaking? Let us know. Sarah and Lieze will take your feedback into account as this secret Honduran coffee takes its final form.

Sisters' Surprise Honduras in short
Sisters' Surprise Honduras is a well-rounded, smooth coffee with notes of almond and nougat. Recommended for drip or espresso.
Fair: fair trade or direct trade
Our ultimate goal: equal and direct relationships with cooperatives and/or farmers . We want to give them ownership in the coffee chain and grow together towards climate-proof plantations.
If this is not (yet) possible, we choose FTO. Through these labels we can be sure that farmers receive support to provide for their livelihood and to invest in their coffee cultivation.

About coffee from the Congo
The first coffee plants arrived in Honduras in 1799, but it wasn’t until the 1990s that the country gained a reputation for the quality of its coffee. Until then, Honduran coffee was mainly exported anonymously. Thanks to investments in infrastructure, education, and improved processing techniques, production in Honduras has increased dramatically since 2001.
The soil in Honduras is ideal for coffee cultivation, but climate change—which is causing extreme rainfall—is now the biggest challenge for what has since become Central America’s largest coffee producer.
Honduras has long struggled with a lack of infrastructure, which is why it took some time for the quality to start improving. Our coffee comes from western Honduras, Copán, best known for its Mayan ruins. Honduran coffees are most recognizable for their often complex, fruity character and a lively, juicy acidity.

uitleg
Grinding degree
Adjust your grind size to the brewing method to get the most out of your coffee. With some brewing methods, the coffee is in contact with water for a long time (requires a coarser grind), in others very short (finer grinding degree). It is therefore important that there is no over- or under-extraction. Your coffee tastes either too strong/intense or too weak/watery.
French press/cafetière: Ground
Filter and Aeropress: Ground
Bialetti/mocha pot: Finely ground
Espresso/porta filter: Finely ground
Can't find the right grind size? Or would you rather grind your own beans? With a coffee grinder, you can make your coffee exactly the way you like it. Order your coffee grinder here.
Nespresso compatibel
