What's special about this coffee
We have been working for several years with Ilse from Velvet Coffee who searches, finds, exports and imports beautiful coffees from Colombia every year. When we tasted 2 coffees from Sara Gutierrez (via Velvet Coffee) for our Christmas coffee in late 2024, we couldn't choose, so we decided to launch one as a Christmas coffee and the other later under 'Sisters' Surprise'. Sarah met Sara Gutierrez at World of Coffee in Copenhagen in June 2024 when there was no question of buying her coffee, but the encounter with this passionate woman stuck and not much later it translated into a first beautiful collaboration.
About coffee from Colombia
Coffee in Colombia was introduced by the Jesuits in 1723, but it took until 1912 to make coffee a major export product. Colombians quickly realized that marketing and “brand building” were very important, and in 1958, coffee farmer Juan Valdez was put forward as a signboard by the FNC (Federación Nacional de Cafeteros). He and his mule symbolized Colombian coffee and appeared on coffee packaging and various campaigns.
Meanwhile, the DNC has grown into an unwieldy organization that does not always put the quality of coffee first. Colombian coffees have a wide range of flavors, from heavy chocolatey coffees to very sweet, fruity coffees. Again, the different regions with their own climate types add a lot of nuances to the bag.
Producers & cooperative
Sara's plantation is located in the village of Buenavista; her finca itself is called “El Silencio” (= silence). Sara does not use aggressive pruning methods, but she is careful to keep nature as intact as possible. She says she never uses herbicides, and through her own hives, this is how natural pollinators are used. Sara spent her childhood among the coffee plants in the Colombian mountains. She is now a 4th generation coffee grower; she inherited the farm and a wealth of experience and traditions from her father. Sara is an incredibly talented and ambitious producer who in recent years has experimented a lot with new processing methods to further enhance the natural flavors of coffee. She obtained the certificate of Arabica Q grader and with a degree in “business administration” she also manages to revitalize the business side of her farm.

Grinding degree
Adjust your grind size to the brewing method to get the most out of your coffee. With some brewing methods, the coffee is in contact with water for a long time (requires a coarser grind), in others very short (finer grinding degree). It is therefore important that there is no over- or under-extraction. Your coffee tastes either too strong/intense or too weak/watery.
French press/cafetière: coarse grind

Onze thuis-composteerbare capsules zijn een milieuvriendelijk alternatief voor aluminium, maar ze werken nét iets anders in je Nespresso® machine. Hier zijn een paar handige tips om de beste koffie-ervaring te garanderen:
Plaatsing
De capsules passen in alle Nespresso® toestellen vanaf 2010 (behalve de L’OR Barista), maar omdat ze niet van aluminium zijn, glijden ze iets minder soepel.
Onderhoud
Reinig je machine minimaal eens per twee maanden om verstoppingen te voorkomen en de waterdruk optimaal te houden.
Spoelen en voorverwarmen
Spoel je machine voor gebruik even door. Dit verwijdert restjes oude koffie en helpt om de capsule makkelijker door te prikken. Een warme machine draagt bij aan een soepelere koffiebereiding.
Waarom kiezen voor composteerbare capsules?
Aluminium capsules lijken misschien een eenvoudige oplossing, maar ze bevatten vaak meer dan alleen aluminium: verf, siliconen en plastic filters. Na recycling blijft er nog geen 20% van het oorspronkelijke materiaal over. Onze composteerbare capsules zijn daarentegen écht een stap richting duurzamer koffiedrinken.
