An extra dark coffee 'Italian style'espresso. Very atypical Ray & Jules, because faster roast at higher temperature. But within this genre, we are enormously proud of the result and quality of this coffee. Especially powerful and intense flavor.

Dark Roast, Blend in short
This Dark Roast 'Italian style' is a creamy blend from Nicaragua and Indonesia, with notes of caramel and pecan nuts. This coffee was first roasted 'extra dark' making it perfect for espresso.
Impact
The farmers in Indonesia use organic fertilizers from livestock for their soils and the coffees are grown “organic by default,” often between crops with banana, ginger, avocado, papaya, cinnamon, depending on altitude. They also set up demo plots (2 for arabica and 2 for robusta) to experiment and find the best agroforestry model.
To be prepared for El Nino in future years, they plan to plant Calliandra during the wet season and then stomp it during the dry season as a mulching strategy.

What's special about this coffee
With this coffee we are doing something really atypical.
In collaboration with a partner, who may also want to switch to our solar-powered technology, we did several special roasts to show the limits of the machine. So this coffee is not fast and slow roasted as you are used to from us - but faster and at a higher temperature.
We worked on this and are happy to let you taste this 'Italian Style' coffee. Within this genre, we are proud of the result and the quality of this extra dark roast.

About coffee from Indonesia
This blend consists of 30% robusta from the village of Rende Nao, on the island of Flores in Indonesia. The island not only has a range of unique robusta varieties, the quality of these “fine robustas” is known worldwide.
Producers & cooperative
For information about the 70% arabica from Nicargua, see Lovely Luna.
The remaining 30% robusta comes from ASNIKOM, a local cooperative from Manggarai, which processes robusta with the same machines and standards as Arabica. Both radical and intuitive. This Side Up promised to pay them the same premium as they would receive for arabica. Since 2018, the harvest has come from three families in a single village of Rende Nao.

Grinding degree
Adjust your grind size to the brewing method to get the most out of your coffee. With some brewing methods, the coffee is in contact with water for a long time (requires a coarser grind), in others very short (finer grinding degree). It is therefore important that there is no over- or under-extraction. Your coffee tastes either too strong/intense or too weak/watery.
French press/cafetière: coarse grind
Filter and Aeropress: medium grind
Bialetti/mocha pot: fine grind
Espresso/porta filter: very fine grind

Onze thuis-composteerbare capsules zijn een milieuvriendelijk alternatief voor aluminium, maar ze werken nét iets anders in je Nespresso® machine. Hier zijn een paar handige tips om de beste koffie-ervaring te garanderen:
Plaatsing
De capsules passen in alle Nespresso® toestellen vanaf 2010 (behalve de L’OR Barista), maar omdat ze niet van aluminium zijn, glijden ze iets minder soepel.
Onderhoud
Reinig je machine minimaal eens per twee maanden om verstoppingen te voorkomen en de waterdruk optimaal te houden.
Spoelen en voorverwarmen
Spoel je machine voor gebruik even door. Dit verwijdert restjes oude koffie en helpt om de capsule makkelijker door te prikken. Een warme machine draagt bij aan een soepelere koffiebereiding.
Waarom kiezen voor composteerbare capsules?
Aluminium capsules lijken misschien een eenvoudige oplossing, maar ze bevatten vaak meer dan alleen aluminium: verf, siliconen en plastic filters. Na recycling blijft er nog geen 20% van het oorspronkelijke materiaal over. Onze composteerbare capsules zijn daarentegen écht een stap richting duurzamer koffiedrinken.
