This is a special series of coffees that the sisters - our roasters - Sarah and Lieze want to surprise you with. Temporary and limited availability. From different origins and with different flavors.

Ocotepeque, Western Honduras on the border with El Salvador. Farm El Aguacate, 1250 – 1450m

2 (medium). A flavour bomb of plum, grape, lemon, honey and chocolate.

What's special about this coffee
We buy Sunny Joe via Cafesmo, but during a visit (March 2024) to the cooperative, Emelina's coffee caught our eye. Lots of fruit, wonderfully fresh and for Emelina the first time that she can sell her lot like this at a higher price based on quality.
Emelina has 3 children and a grandson. She runs her coffee farm together with her right hand Leyton. She has a number of plots, together good for 3.5 hectares of coffee plants, many avocado and lemon trees. Emelina consciously chose to let her children study at university so that they would have more opportunities than what she herself experienced. When possible, her children like to help out on the plantations. Emelina is unfortunately not in the photos, she is very shy and did not want to be photographed.
About coffee from Honduras
The first coffee plants arrived in Honduras in 1799 and since 2001, Honduras has seen a dramatic increase in production. Honduras’ soil is ideal for growing coffee, but climate change, which is causing extreme rainfall, is now the biggest challenge for what is now the largest coffee producer in Central America.
Honduras has long struggled with a lack of infrastructure, which is why it took a while for the quality to start improving. Our coffee comes from the west of Honduras, Copán, best known for its Mayan ruins. Honduran coffee is mainly recognizable by theoften complex fruity quality and a lively, juicy acidity.

Grinding degree
Adjust your grind size to the brewing method to get the most out of your coffee. With some brewing methods, the coffee is in contact with water for a long time (requires a coarser grind), in others very short (finer grinding degree). It is therefore important that there is no over- or under-extraction. Your coffee tastes either too strong/intense or too weak/watery.
French press/cafetière: coarse grind
